Vegan Banana Bread

This is the prefect banana bread recipe! It’s light, low in sugar and healthy!

Ingredients:

  • 4 bananas
  • 6 dattes
  • 1 orange
  • 85ml plant milk
  • 30g coconut oil
  • 1tsp vanilla extract
  • 350g all purpose flour
  • 40g brown sugar
  • 15g flaxseeds
  • 1tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 25g walnuts, chopped

Method:

  1. Preheat the oven at 180°C.
  2. In a blender mix together the wet ingredients: 3 bananas, 6 dattes, 1 orange, 85ml plant milk, 30g coconut oil (melt it in the microwave first), 1tsp vanilla extract.
  3. In a large mixing bowl, add the dry ingredients: 350g all purpose flour, 40g brown sugar, 15g flaxseeds, 1tsp baking powder, 1/2 tsp bicarbonate of soda, 1 tsp cinnamon. mix them together.
  4. Incorporate the wet ingredients with the dry ingredients slowly and mix it. add the chopped walnuts at the end.
  5. Pour the batter into the tin, Slice the last banana in 2 and put at the top for the topping.

6. Bake in the oven for 45min at 180°C.
